Banana Bread Bars with Salted-Toffee Icing

very ripe (heavily spotted) bananas
1/2 c.
canola oil

Salted-Toffee Sauce
SALTED-TOFFEE SAUCE

heavy cream
1/2 c.
brown sugar

unsalted butter

DIRECTIONS
- Heat oven to 350°F. Spray 9- by 13-in. baking pan with nonstick cooking spray. Line with parchment paper, leaving overhang on two long sides; spray paper.
- In medium bowl, mash bananas, then stir in oil, sugar, and egg.
- Add flour, baking soda, and salt, stirring just to combine, then fold in chocolate chips (do not overmix; it will toughen bread).
- Transfer batter to prepared pan and bake until bread gently springs back when pressed, 20 to 25 min.
- Let bread cool completely in pan on wire rack. Use overhangs to transfer to cutting board, then cut into pieces. Top with Salted-Toffee Sauce.
SALTED-TOFFEE SAUCE
- In medium saucepan, combine heavy cream, brown sugar, and butter; bring to a gentle boil. Boil until slightly darker in color, 2 to 3 min.
- Remove from heat and stir in pinch salt. Let cool 10 min. to thicken, then spoon over banana bread bars.
